Individual Custard with peach


So while I was driving home from work, I decided that I wanted to try my hand at custard. However, being a health nut,  I didn't want to have this HUGE custard sitting around. My family would hate me for making such an addicting dessert :P. So I thought of making individual custards. On top of that, I thought that adding peach and Greek yogurt would be a fun thing to try.



Crust

Ingredients
1 package of gram crackers
1/2 stick of butter melted

Directions
Crumble gram crackers until crumbs. Then add the melted butter and mix together. Finally, take cupcake tins and fill up 1/4 of the way up (If you want to add more, it will just be more crunchy!).
The amount of gram crackers you are going to need!










Custard
Ingredients 
2 peaches peeled and
1 cup Greek Yogurt
1 cup skim milk
2 eggs beaten
1/2 cup white sugar
1/4 tsp salt
1 tsp vanilla

Directions
Preheat the oven to 400 degrees

In a double broiler put the milk and yogurt together, cook until sides are bubbling and turn off burner. Then, mix together the sugar, salt, vanilla, and peach together. After that add the milk-yogurt blend. Mix together. Take a spoon and put into prepared cup cake tins to about 3/4 the way up.

Cook for 20 minutes or until toothpick comes out clean. Let cool before taking out custards




Authors note: The crust is not that crisp but it still tastes delicious! What you could try (I haven't yet) is put egg whites on to the crust to keep it from getting soggy.
