Spinach, onion, mushroom, and goat cheese omelet

Remember how I said that I was going to try the Spinach, onion, and mushroom omelet with goat cheese? Well I did and it was amazing!! I also found that goat cheese is actually healthier than cheeses like feta and Monterey jack cheese. It has less sodium, more protein, and fewer calories for the amount that is being digested. Also, for those who cannot digest cow milk, it is a perfect substitute!
Recipe
Ingredients--
--2 eggs
--1/3 cup cut up mushrooms
--1/2 cup spinach leaves
--1/3 cup diced onions or 1 tsp. dried onion
--2 slices of thick ham diced--1/3 cup goat cheese
--2 tsp. butter
Heat pan and 1 Tbs. butter. Wait until butter melts
-Sauté mushrooms and diced onion. Add ham and cook for 20 seconds on each side.Then add spinach leaves. Cover the pan with a top to allow the spinach leaves to cook and shrink.
-Pour the mushrooms, onions, ham and spinach leaves into a bowl.
-Crack eggs into a separate bowl and stir with a fork until the whole yolk has been broken
-Add remaining butter into the pan. Pour the eggs into the pan. Every 20 seconds pick up pan and tilt to allow the liquid congealing on the top to move to the edges.
-Once most of the liquid on the top is gone, flip the omelet
-Take onion, mushroom, ham, and spinach mix and pour on the left or right side of the egg. Add the cheese and then flip the empty side of the egg on top of the condiments.Flip one more time after 10 seconds to ensure both sides are cooked.
--Take plate and put omelet on it. Enjoy!
