This evening, I noticed that I had some overly ripe banana’s and what better way to get rid of them than make banana bread? I first made banana muffins which sparked this recipe for banana bread. The original recipe comes from Joy of Cooking (which is amazing!) and then I added a few extra ingredients.
Pre heat the oven to 350 degrees--Whisk together:
1 cup whole wheat flour and 1/2 cup all purpose
1 1/2 tsp. baking powder
--Beat in separate large bowl until creamy
2/3 cups of sugar
6 tbs. butter
1 tsp. cinnamon
1/2 tsp. nutmeg
--Beat in
2 large eggs
2-3 mashed banana’s
---Add the dry ingredients in 2-3 parts until smooth
--Scrape banana bread into a buttered bread pan for about an hour or until when a toothpick is inserted it comes out clean
