fully loaded quesidillas

For lunch, I made myself a quesilldas. They are filling AND delicious! My family always puts cilantro into our quesidillas and that has been the key ingredient in every Mexican recipe I make now.

Ingredients:
1/4 cup diced onions
1/3 cup mushrooms
1/2 a green pepper
1/3 cup of shredded cheese (I used mozzarella but mixed cheese works too)
1/3 cup cooked and cut chicken
1 tsp. cilantro
2 tortillas

  1. Saute onions and mushrooms. Add the green peppers and cook until heated
  2. Take the onions, green pepper, and mushrooms off of the heat and then heat one tortilla. Add mushrooms, green peppers, and onions onto the tortilla. Sprinkle over mixture cilantro.  
  3. Add the cheese. Then put the second tortilla on top of the first. Cook until both sides  are brown and the cheese is melted. 
  4. Cut into fourths and enjoy!
