Egg White omelet Lunch

So seeing that I had extra egg whites from the ice cream experiment, I decided that I was going to make use of them with this delicious lunch. It is not only healthy but low in Cholesterol and very filling! Tell me what you think!

Ingredients:
3 egg whites
1/2 cup of spinach
1/2 cup Monterey jack cheese
1 1/2 Tbs. butter
Whole wheat toast
  1. Heat the pan and add 1 Tbs. of butter. Sauté spinach (I would most recommend covering the pan so that it cooks thoroughly)
  2. While the spinach is cooking put the whole wheat toast in the toaster
  3. Add cheese and allow it melt a little bit. Then add the egg whites on top
  4. Pick up the pan and rotate bringing the wet egg whites around the edges
  5. Once it is almost cooked, flip the omelet
  6. Take the toast out and butter it with the remaining butter. Place the omelet on top of the whole wheat toast and enjoy.
