A challenge? Accepted

So it is currently July 11th and I am accepting the challenge given to me by my friends. The real question is, where to start? I have a couple of days luckily before I am on my own and have to officially cook for myself (oh joy?). Actually, it is pretty exciting. I really hope to become better at cooking and make foods that others will want to enjoy too. I will keep you all posted on my food adventures. I may need ideas on what to make though. I have already decided that I am going to try:
-Variety of breads
  • Extremely healthy bread stuffed full of wheat, flax's seed, and any other healthy oat
  • Cinnamon swirl bread
  • Mixed berry bread
-Breakfast dishes that go beyond the typical cereal, yogurt, granola, or just eggs
  • Egg Benedict (maybe to be made on the homemade bread?)
  • baked egg
  • Omelet stuffed with variety of veggies like spinach, roasted peppers, onions, broccoli...maybe adding some cheeses like goat cheese, feta, or whatever interesting cheeses I can find
  • Somehow make French toast and pancakes healthy
  • whole wheat waffles
  • mixed fruit with homemade granola
  • Muffins that are healthy
  • Oatmeal with variety of foods added
  • crepes
-Lunch/ Dinner going beyond a sandwich or something out of a box
  • Variety of salads
  • Ratatouille
  • Honey BBQ chicken
  • Thai chicken
  • Stir-fry of some sort
  • Mexican food (A MUST) like enchilada, Quesadillas, Burritos but make it healthy
  • Stuffed shell pasta dish
  • Sweet Potato Fries/French Fries
  • Chicken Noodle Soup from scratch 
  • Whole wheat crust pizza with veggies and ham
-Desserts that are healthy but delicious
  • Baklava
  • Mixed Fruit pie
  • layered chocolate and peanut butter cookies
  • One serving cake/Pie
I think that is all...Now this is a HUGE post. I will be posting pictures and a step by step summary on what I am doing with all of my culinary adventures. Keep you posted!!
