Individual chocolate pudding pie

Being bored all day, I decided to make pie. Except since I wanted to conserve money, I created a pie made out of the ingredients in my house. However, when looking up some inspiration for chocolate pies, I noticed how LONG it takes for a crust (from scratch) to bake! I then decided to make individual pies so that I could eat them in the time span of a few hours instead of a day! It has the perfect chocolaty rich taste that all will love!



Ingredients for crust---Adapted from http://simplyrecipes.com/recipes/perfect_pie_crust/

1 sticks of unsalted butter cut into 1/2 inch cubes---very cold
3-5 tsp refrigerated water 

  1. In a food processor combine:  
         1/2 cups wheat flour
       3/4 cup all purpose flour
       1/2 Tbs sugar
       1/2 tsp salt
   
  2.  Add butter until it looks like coarse meal and the butter is small miniature balls.
  3.  Slowly add the water 1 Tbs at a time until dough clumps together.
  4. Take the dough out and place on a clean surface. Gently kneed the dough into a mound creating a disk.
  5. Using a of tin foil, place mound on the foil and sprinkle flour. Place in refrigerator for 1 hour. 
  6. After the hour, take dough out of fridge and let sit for 5 minutes.  Roll out dough. 
   7. Cut into 3.5 inch disks (or small enough to fit into your cupcake tin. 

                                         


8.  Put each disk into the cupcake tray, lining the sides of each mold. 

9.  Sprinkle the inside of each cupcake crust with a 1/8 tsp. of sugar.
10. Bake for 15 minutes at 350 degrees.
11. After 15 minutes, take each cupcake out if the mold, place on a nonstick pan and cook for an extra 5 minutes at 350.


12. Put aside for later


Filling
1. Combine in a large bowl:
          1/4 cup sugar
          2 tsp cornstarch
          3/4 cup Greek yogurt
          1 1/4 cup whole milk
          1/3 cup coco powder
          1 egg

2. Put into a double bowler and add 1/2 cup chocolate chips and 1 tsp cinnamon.
3. Mix and cook until chocolate is melted and pudding is thick


 

4. Divide the pudding between the cupcake crusts
5. Put into the refrigerator to cool
