A crust filled with Zucchini

This is my second post for the day. I decided to make zucchini crusted pizza with tomato, onion, mushrooms, ham, and green peppers. It was a SUCCESS! :D Delicious, simple, and cheesy.
Ingredients for crust:
3 zucchini’s grated thickly (3 1/2 cups worth)
1/3 cup flour (to be healthy, I used whole wheat)
3 eggs, beaten
1/2 cup grated mozzarella
1/2 grated parmesan
1 Tablespoon of basil leaves (I used dry but fresh works just as well)
2 teaspoons salt
1 tablespoon garlic (spread across top of pizza)

Ingredients for toppings:
1/4 caramelized onion
1 green pepper
2 slices of ham
1 tomato
1/3 cup sautéed mushrooms
1/3 cup tomato sauce
1/2 cup mozzarella cheese
Instructions:
  1. Preheat oven to 350 degrees.
  2. Salt the zucchini lightly and let it sit on the counter for fifteen minutes. Squeeze out all the excess moisture with a spoon or hands. IMG_0141
  3. Combine all crust ingredients, and spread into an oiled 9 x 13 inch baking pan. Bake 20-25 minutes—until the surface is dry and firm. Brush the top with oil and broil it under moderate heat for three minutes. IMG_0142
  4. Pile toppings on top and cook at 350 degrees for 15 minutes.
  5. Enjoy!IMG_0143

(I got this idea from Moosewood Cookbook by Mollie Katzen)
